Sweets, soups, breads and...

sweets
Among the traditional sweets that are common in Zanjan province, we can mention shasti, khodchi, rice bread, sohan special and baklava.
Ashes
Ash Kachi
They cook semolina and rice together. When eating, some dry dill is fried and sprinkled on the mixture. This soup is for winter season.

Bulgur soup
They cook onions, peas, beans and semolina and crush it well. At the time of consumption, some heated yellow oil with cinnamon is poured on it.

sorrel soup
Carrots, elderberries, chickpeas, beans, wheat and onions are fried and then vegetables are added to it and cooked. Pomegranate paste or vinegar is added to make it sour. For decoration, ground walnuts and hazelnuts are sprinkled on it. This soup is for winter season.

Hats off
Chopped onions are fried with oil and flour and cooked with some water and cobs. Then yogurt, curd, kakuti, hot mint, walnuts, raisins and some boiled eggs are added to it.

bozzu - piyazo
They fry the flour and mix it with some tomatoes, fried potatoes, cobs and rice and pour water into it. When it boils, it is ready to use.

Halvas

Sesame halva
Sesame is fried with flour, then some sugar and oil are added to it and it is made into pellets and consumed.

Terhalwa
Rice is cooked and mashed. Then it is fried with sugar and oil and consumed.

Dushab halva
The flour is first mixed with a little water and then fried in a pan. Then it is mixed with yellow oil and after frying it is mixed with grape juice and eaten.

Amaj halva
First, Amaj - a mixture of wheat flour and a small amount of milk or water - is fried with animal oil and thick syrup, coriander seeds, cardamom, cinnamon, saffron and rose water are added to it. This halva is mostly prepared and used for religious ceremonies and occasions.

Turkish halva
First, they boil water, then add some flour and oil to it. When the oil rises a little, they add sugar or doshaab to it and consume it.

Khashil xasil
Wheat and rice are cooked together, oil is added to it, and some sugar and cinnamon are poured on it and eaten.

The breads
Yokha bread or Afaq ofag
This bread is special for pilgrims traveling to Mashhad and they give it to the pilgrims with roasted wheat.

Kok chorkikok ceraki
This bread is mostly prepared on Wednesday evenings.

Tawanan
They add some olive oil to the flour dough of this bread and then cook it in the oven. This bread is prepared only in the water part.

doymang bread
This bread is baked when they spread the table of Hazrat Fatima Zahra (PBUH), with the intention of having a child. Then this bread is distributed among the guests with some raisins in the table, or they cook this bread in the form of DJ.

The bread baked on teak is cut into small pieces, then fried with animal oil and a thick syrup of saffron, cardamom and cinnamon is added to it. This food is special for the Nazri table of Hazrat Zahra (PBUH) and is used along with other foods of this table.

six sizes
Chopped onions, small meatballs, date slices, raisins, spices and saffron are fried with oil and eggs are added to it. This dish is used along with other Syrian Wednesday night dishes.
